Origin: The Russian sturgeon (Acipenser gueldenstaedtii), also known as the diamond sturgeon or Danube sturgeon, is a species of fish in the Acipenseridae family. It is found in Azerbaijan, Bulgaria, Georgia, Iran, Kazakhstan, Romania, Russia, Turkey, Turkmenistan and Ukraine. It is also found in the Caspian Sea. This fish can grow up to about 235 cm (93 in) and weigh 115 kg (254 lb). The Ossetra sturgeon fish, found mainly in the Caspian Sea, is usually harvested in Iran or Russia. The sturgeon reaches maturity at around age 15, but can live up to eighty years. Ossetra (also Oscietra, Osetra, or Asetra) caviar, is one of the most prized and expensive types of caviar, eclipsed in price only by Beluga caviar). It is obtained from the Ossetra sturgeon which weighs 50-400 pounds and can live up to 50 years.

We supervise the entire course of life of the fish , from the very beginning till maturity. Clean culture environment, WITHOUT ANY RISK OF SECONDARY TASTES of the fish or the eggs. Salting is carried out by the traditional Russian Malossol method (small amount of salt); the roe is rigorously selected by hand and packed manually in a controlled environment. This is a meticulous artisan process, a ritual that is perpetuated to maintain high standards of excellence over time.
